Sprinkle each rosemary cracker with the shredded parmesan cheese and wrap with a slice of bacon. Sprinkle brown sugar on top of each wrapped cracker and bake at 250 degrees for 2 hours. Serve and enjoy!
Nothing warms our hearts (and our bellies!) more than Christmas Day with our loved ones. Try this fool proof filet and delight in the smiling faces of the people you adore.
FOOL PROOF FILET
1- 5 pound beef filet
Prepare paste of 1 stick unsalted butter, softened, 1 tablespoon salt, 1 tablespoon coarsely ground black pepper, 1 teaspoon instant coffee, 7 cloves crushed garlic.
Preheat oven to 500°. Spread the paste mixture all over meat. If possible, do this step the night before. Cover and refrigerate. Allow beef to come to room temperature prior to roasting. Roast in preheated 500° oven for EXACTLY 25 minutes for medium-rare and EXACTLY 22 minutes for rare. After removing from the oven cover tightly with foil and let stand for 20 minutes before cutting.

In honor of Columbus Day, try your hand at this good old fashioned American classic straight from Karel's kitchen.
1 tablespoon unsalted butter
1 tablespoon olive oil
½ cup chopped yellow, red or green pepper
2 celery stalks, chopped
4 cloves garlic, minced
1 large onion, chopped
1/2 bottle dark beer
1 teaspoon thyme leaves
1 teaspoon dry mustard
½ sweet barbecue sauce OR molasses (I like Sticky Fingers)
¾ teaspoon salt and ½ teaspoon pepper
4 tablespoons Worcestershire sauce
2 pieces whole wheat bread soaked in milk (don’t drain)
1 ¼ pounds lean ground beef
1 ¼ pounds lean ground turkey or ground lamb
1 ½ pounds ground veal
½ cup chopped Italian parsley
3 large eggs slightly beaten
1 pound thick cut bacon
Preheat oven to 375°. In a sauce pan, cook onion, celery, and pepper in oil/butter until soft, add garlic. Add beer, molasses (or barbecue sauce) and Worcestershire sauce and boil until syrupy and reduced, approximately 10 minutes. Remove from heat and while still warm, add spices. When cool, combine syrupy mixture with eggs, bread, parsley and meats; combine until blended. Don’t over mix as it will toughen. Cover with bacon in a lattice pattern. Top with molasses/mustard mixture or barbecue sauce.
Bake approximately 1 ½ hours in oven until done.
**Hint: as you put the meat in the mixing bowl, use your fingers to place small pieces of meat at a time. This will allow you to mix it easier and combine all the ingredients without over mixing.
