Labor Day is fast approaching and many of us here in South Florida are looking forward to a fun filled long weekend of cool swimming pools and hot BBQ grills. Take a drive through the tree lined streets of Coral Gables with your windows rolled down and you’re sure to smell the savory aroma of All-American favorites like hamburgers, hot dogs and corn on the cob. Why not finish it off with a delicious and refreshing fruit trifle? Enjoy in good health with family and friends this holiday weekend.
Karel’s Tremendously Terrific Trifle
To do justice to this dessert it should placed in a tall, clear trifle bowl.
8 small slices of plain vanilla cake (can be bought at the bakery or you can use vanilla layer cake)
2 small cartons of raspberries
2 large cartons of blueberries
1 extra large container of strawberries, clean and sliced thin
1 quart extra heavy whipping cream
1/3 C. Gran Marnier
2 Tbsp sugar
2 tsp vanilla
Beat cream, sugar and vanilla until cream forms small peaks. Place small pieces of the vanilla cake in a single layer in the bottom of your trifle bowl. Then sprinkle approximately 2-3 Tbsp of the Gran Marnier on the cake, followed by 1 ½ - 2” of the whipped cream. Take your sliced strawberries and place in a row lining around the inside of the bowl between the whipped cream and the bowl. Use the blueberries next on top of the whipped cream and then more cake, Gran Marnier, and whipped cream; layering until you reach almost to the top. Leave room for the whipped cream to be your final layer and then decorate with raspberries surrounding the top, point side up.
