In many households, the Thanksgiving countdown has already begun. Recipes are being planned, invitations are being sent out and the sweet aroma of pumpkin pie and succulent turkey are beginning to tickle our noses once again. Here is one of our favorite recipes to serve our family and friends as we give thanks each year and stay tuned to our website for a new recipe post weekly this holiday season.
Karel’s Sweet Potato Casserole
Ingredients:
3 pounds sweet potatoes
1/3 cup dark brown sugar
8 tablespoons melted unsalted butter
½ cup heavy cream
1 teaspoon vanilla
1 ½ teaspoon cinnamon
½ nutmeg
½ teaspoon kosher salt
3 eggs
1 teaspoon finely grated ginger, or 1 teaspoon candied ginger, grated
½ teaspoon pepper
Preheat oven to 425°. Bake sweet potatoes until soft or microwave until soft (approximately 12-15 minutes. Be sure to pierce the potato skin prior to microwaving). When cool enough remove the skins and then mash the potatoes, adding all of the above ingredients. Pour mixture into baking dish and prepare the following topping:
Ingredients:
½ cup flour
½ cup oats
½ cup dark brown sugar
½ cup chopped pecans
½ teaspoon kosher salt
6 tablespoons unsalted butter, cubed
Preheat oven to 350°. Stir together all ingredients adding butter last. With your fingers rub butter into mixture until you form large crumbles. Add to potato mixture and bake for approximately 30 minutes.
