CUCUMBER, RADISH AND OLIVE SALAD

Ingredients:

1 seedless cucumber, peeled and diced

1/3 cup walnuts, coarsely chopped

6 medium red radishes

1 cup pitted imported black olives

¼ cup crumbled feta cheese

For the salad dressing:

2 cups plain nonfat, Greek yogurt

4 cloves of garlic pressed

2 tablespoons chopped fresh dill

Salt and pepper

Place all ingredients in large bowl and chill. JUST PRIOR TO SERVING, add salt and pepper.

CORN CASSEROLE

Ingredients:

1 can whole kernel corn, drained

1 can cream style corn

1 small can chopped green chilies, drained

1 medium onion chopped

1 package Jiffy corn muffin mix

2 eggs

1/3 cup sour cream

1 stick unsalted butter, melted

1 ½ cups shredded cheddar cheese

Preheat oven to 350°. Combine all ingredients, except cheddar cheese. Pour into greased baking dish and bake for 45 minutes or until golden brown. Add cheddar and return to oven for 5 minutes until cheese is melted. Serve hot.

Love barbecue ribs but can't use your grill on those rainy summer days? Try this "Eazy Peazy" Rib recipe and enjoy those baby backs straight out of your oven.

EAZY PEAZY BBQ RIBS

1 whole slab of baby back ribs

½ cup brown sugar

1 tablespoon kosher salt

1 tablespoon of black pepper

1 teaspoon garlic powder

1 teaspoon paprika

1 bottle of “Sticky Fingers” barbecue sauce OR your favorite barbecue sauce

Preheat oven to 250°. In a bowl, mix all of the ingredients except for the barbecue sauce. Remove “silver skin” from the ribs and press dry rub into meat on both sides with the heel of your hand. Allow ribs to come to room temperature. Wrap tightly in aluminum foil, place on baking sheet and roast for 2 ½ hours. Remove from oven and fold back foil to expose ribs. Raise the temperature of the oven to 350°. Brush both sides of the ribs with “Sticky Fingers” barbecue sauce and bake for 10 minutes. Remove from oven and brush with more barbecue sauce. Repeat 2-3 times.

Try this super easy, cool and refreshing whipped cream torte for those hot summer days.

ICE BOX WHIPPED CREAM TORTE

1 box Nabisco chocolate round wafer cookies

2 pints heavy whipping cream

2 ½ tablespoons sugar

1 teaspoon vanilla

Whip the cream together with sugar and vanilla until stiff peaks form. On cake stand, spread a small amount of the whipped cream for your base. Then take each cookie and make stacks, spreading the whipped cream on top and bottom of each cookie, approximately 6-8 cookies high. Generously frost the entire torte with whipped cream, so that all of the wafer cookies are covered. Cover with plastic wrap and refrigerate no less than 24 hours. Decorate with shaved chocolate or cocoa powder.
